Mango Tiramisu

Ingredients
for 9 servings
- 12 oz mascarpone cheese
- 1 ½ cups heavy cream
- ¼ cup powdered sugar
- 1 ½ teaspoons vanilla extract
- 2 ½ cups mango purée, divided
- 1 ½ cups mango nectar
- 2 tablespoons orange liqueur
- 1 (7-ounce) package ladyfinger
- 1 honey mango, peeled and thinly sliced
- 2 fresh mint sprigs, picked

Preparation
- Beat the mascarpone in a large bowl with an electric mixer on medium speed until light and fluffy, about 2 minutes. Add the heavy cream, powdered sugar, vanilla, and 1½ cups of the mango puree. Beat on medium-high speed until stiff peaks form and the mixture is thick and airy, 3–5 minutes. Set aside.
- Stir together the mango nectar and orange liqueur in a shallow dish. Quickly dip each ladyfinger into the mixture, coating both sides without soaking through.
- Arrange a single layer of soaked ladyfingers in the bottom of a 9-inch square pan. Spread half of the mango mascarpone cream evenly on top. Repeat with another layer of dipped ladyfingers and the remaining cream.
- Cover and refrigerate for at least 6 hours or up to 12 hours, until the layers are set.
- Just before serving, arrange 8–10 slices of the sliced mango in a slightly overlapping line; roll them tightly into a spiral. Repeat until you have 3 mango roses.
- Pour the remaining 1 cup mango puree evenly over the top of chilled tiramisu. Garnish with the mango roses and mint leaves.
- Cut into slices, and serve.
