The Best Vanilla Cupcake Recipe

Ingredients

for 12 servings

  • 3 eggs
  • 1 cup self-raising flour (125 g)
  • ⅔ cup butter (150 g), room temperature
  • 1 teaspoon vanilla extract
  • ⅔ cup sugar (135 g)
  • 1 pinch salt

Preparation

  1. Preheat your oven to 350’F and line a muffin tin with 12 paper liners.
  2. Lightly beat the eggs with a fork. Add them to a bowl containing the flour, butter, sugar, vanilla and salt.
  3. Beat with a mixer until light and creamy, about 2 minutes. Add mixture to greased cupcake liners, 2 tbsp per liner.
  4. Bake the cupcakes for 25-30 minutes, until a toothpick comes out clean.
  5. Serve.
